Here's the recipe:
2 T Olive oil
1 large onion, finely chopped
1/2 c dry lentils
2 cloves garlic, minced
3 T curry powder
1 t ground cumin
1 pinch cayenne pepper
1 28 ounce can crushed tomatoes
1 15 ounc can garbanzo beans, drained and rinsed
1 8 ounce can kidney bean, drained and rinsed
Heat the oil in a large pot over medium heat. Sweat onion until tender. Mix in the lentils, garlic, curry powder, cumin and cayenne pepper. Stir and cook for 2 minutes. Add tomatoes and beans. Reduce heat and simmer at least one hour, stirring occasionally. Add water if mixture becomes too thick. Season with salt and pepper. Serve over basmati rice. Serves 8.
